You can always buy an older generation that didn't have Eyesight, but no, I highly doubt you can completely disable/remove Eyesight from your Subaru. It's integrated into "nearly everything". You can turn off most features, of course, as has been mentioned.
Pushing the 3 bar distance button again gets you to the "acquisition alarm." Pushing the +/- button on the the cruise control down will disable the beep. The only way I got this setting to save was to push and hold the 3 bar distance button again. Pushing the cruise button reset the settings! Setting three is for the lead vehicle start alert.
